Need an appetizer to "wow" your guests? Try our Sausage & Cheese Appetize.

Sausage & Cheese Appetizer


6-8 leftover breakfast sausage links, coarsely chopped
(or 1 link of kielbasa sausage or any other precooked sausage)
8 oz. goat cheese, softened
1/3 C green onions (whites & green tops), finely chopped
1/3 C red peppers, finely chopped
1 small hot pepper (jalapeno or similar variety), finely chopped
2 Tbsp. dried rosemary*, crushed
2 Tbsp. dried thyme*, crushed


10 slices of Provolone cut diagonal & horizontal into quarters
to make 40 slices
30 cherry tomatoes

Cut tops of tomatoes off and scoop out the pulp. Turn upside down on a paper towel and set aside to drain liquid. In a bowl, combine sausage, goat cheese, peppers and herbs. Mix until well combined. Place a spoonful of cheese mixture into each tomato or use a pastry bag with a star tip and pipe mixture into tomato. Top with 1 quarter of provolone cheese Place under broiler just till cheese starts to melt ( 30 seconds to 1 minute). Place on serving tray with Rosemary Sprigs as a garnish!



*If your going to use fresh herbs, please remember to double the amount called for. The dried spices and herbs are more pungent. For this recipe, I prefer the flavor of dried herbs, it adds more robust. But remember this is only a “guideline”, you need to “jazz up” each dish you prepare according to what you and your family prefer!
